Mad Hatter is a unique and incredibly productive sweet pepper known for its unusual, three-lobed, hat-shaped fruits! A hybrid developed from the South American Capsicum baccatum species, these peppers have a distinctive flying saucer appearance, with ruffled edges and a small center. Fruits grow approximately 2–3 inches wide, starting green and ripening to a beautiful bright red.

Unlike many peppers with this unusual shape, Mad Hatter is mostly sweet, with a crisp, citrusy, slightly floral flavor. Occasionally, a little mild heat can develop near the center of the fruit, but the outer flesh remains sweet. Perfect for fresh snacking, salads, stuffing, pickling, or adding a splash of color to your favorite dishes.
